I have always loved homemade white cake, however white cake has a tendency to be very very dry and although I can make a good looking cake I have yet to make a good looking good tasting white cake.
But undeterred I forge on ,it is usually in the middle of the holiday festivities that I take on my own cake challenge. It is clear, I like to make myself miserable, there is way to much to do and the project has yet to be a success . So this past season, always sticking with tradition, the week before Christmas, I gathered up all my ingredients and went to work, the kids left me alone so I could concentrate on the masterpiece, my first attempt...... almost good a bit dry, slightly overcooked, but the flavor was promising... never having been this close to success, I felt it was worth another try, so I tweaked the recipe and I tried again........IT worked.....
1/1/4 cups of half and half
3/4 cup raspberry jam
Frosting
1 cup butter, softened
1 8oz package cream cheese room temp.
2 cups powdered sugar
Preheat oven to 350 degrees. Grease bottoms of two 9x11/2 inch round cake pans and lightly flour. set aside In a medium bowl, combine flour baking powder and salt set aside. In a large bowl, beat the 10 tablespoons of butter with an electric mixer on medium high for 30 seconds. add mayonnaise and combine,Gradually add the 1 1/3 cup as granulated sugar, beating until combined. add eggs one a time,beating after each addition, Beat in the 1 1/2 teaspoons vanilla. Alternately add flour mixture and half and half,to butter mixture, beating at low speed after each addition just until combined. Spread batter into prepared pans.
Bake about 30 minutes or until a toothpick inserted in the centers comes out clean. Check at 25 minutes just to be sure the last thing you want to do is overcook.. Cool cake in pans on wire rack for 10 minutes. Remove from pans and continue to cool on wire racks.
Frosting: In a large bowl,beat 1 cup of butter on medium high speed until fluffy add softened cream cheese and beat until fluffy, add 2 teaspoons vanilla, gradually beat in powdered sugar.
Assembly:after the cake has completely cooled. Place one layer on a serving plate, spread jam over the top and place next layer atop. cover with frosting and Enjoy !!!!!
