Pepperoni Pizza Casserole

Snow days and school delays call for a good easy pasta dish.

After a long day of shoveling the snow back outside and loading the dryer, this great meal feeds the crowd and most of these items you should have on hand.

If not feel free to substitute and make this an everything pizza casserole.

Onions, mushroom, cooked ground beef, additional cheese... put those kiddos to work.

You'll be a snow day star....

Pizza Pasta
8 ounces uncooked pasta
1 (14oz) jar pizza sauce
2 ounces sliced pepperoni, halved (about 3/4 cup)
1/4 cup finely chopped green pepper
1/4 cup grated Parmesan cheese
1/2 tsp dried oregano
1 garlic clove minced
1 cup shredded mozzarella cheese

Heat oven to 375 degrees.
Spray 8-inch square baking dish with cooking spray and set aside.
Cook pasta to desired doneness and drain.
In a large bowl combine cooked pasta, pizza sauce, pepperoni, bell pepper, Parmesan cheese, oregano and garlic: mix well.
Spoon into spray-coated dish and sprinkle with mozzarella cheese.
Cover with foil.
Bake for 30-35 minutes or until mixture is thoroughly heated and cheese is melted.
