Soup--simple and delicious
That is what I want on these long, cold New England days.

3 1/2 cups chicken broth
2 inch piece of Romano or Parmesan rind plus 1/4 cup shaved cheese for serving
8 ounce package of egg noodles
1 bunch Swiss Chard,ribs and stems removed, cut into one inch slices
lemon wedges for serving (optional)

In a medium sized soup pot bring broth,rind and 3cups of water to a boil.
Add noodles and cook according to package instructions.
During the last minute of cooking,add chard and simmer until tender.
Remove the rind and serve soup with shaved cheese and lemon wedges.
