Grilled Cod with Buttered Crumb Topping




A wonderful meal for the the whole gang including all the fish haters among them.

Cod is a firm white fish that grills beautifully and takes on the flavors of the topping nicely.
It's not too fishy, very important when feeding the whole family :)

Pimento adds a little zip to this great buttery topping.


The ingredients

3 pounds cod fillets

1/2 cup mayonnaise

1 stick of butter, melted

2 tbls chopped chives

2 tbls chopped parsley

2 tbls chopped pimento

3/4 cup Parmesan cheese (grated or from the green jar)

1 1/2 cups crushed Ritz or similar buttery cracker

Juice of 3 lemons, divided

1 large loaf of store-bought garlic bread, removed from plastic wrapper

Directions:

Preheat the grill to high.

Divide fish between two large pieces of aluminum foil



Melt the butter and stir together with the rest of the topping ingredients
and the juice of two of the lemons.




Pat firmly on top of the fish and bring sides of the foil together to form a nice packet.
Seal the foil well.




Turn the grill down to low
and place fish packets on the center of the grill.

Place the garlic bread on top grill rack, close and cook for 3-4 minutes,


Open foil on fish packages and turn the garlic bread over.

Close grill and cook another few minutes until cracker topping is browned.


Remove the fish and bread from grill and
place fish on garlic bread.

Top with remaining lemon juice and salt and pepper to taste.


This meal is so easy, and the result look good all the way around.

So, let me get this right - it only takes about 6-8 min of grilling the cod?

For real? It's almost too good to be true.

Yes it is true, the pockets help cook it quickly the key is to preheat the grill, my only concern is how browned you would like the topping, it will brown better in the oven ,but the fish does cook rahter quick, I would just check the fish to be sure the it is done depending on your grill temp.they all vary. But mine was ready in about 8 minutes T
