What's for Dinner Mom?

Tilapia Again

No complaints from the peanut gallery on this one!
It just so happened that Tilapia went on sale for $4.99 per lb less than two weeks after the column ran featuring this delightful fish.

This is a variation on the grilled fish, inexpensive and oh so easy,
served with (once again) the baked brown rice and a nice simple side salad.

The crowd went wild :)

I found this wonderful recipe in the latest Woman's Day Magazine:

Grilled Tilapia with Wasabi Butter

Marinate one piece of fish for every person in a large Ziploc bag
This recipe is for 6-8
Marinade

1/2 cup frozen orange juice concentrate
3 tbls soy sauce,
2 tbls rice vinegar,
1 tbl vegetable oil
Marinate for 20 min up to 4 hours
Wasabi Butter
4tbls butter softened
4 tsps chopped fresh chives
1/2 tsp Wasabi paste or powder
Combine ingredients in small bowl.
Beat at medium speed until mixed well (1-2 minutes)
Cover and refrigerate at least one hour to enhance the flavors.



Place fish on grill heated to medium.
Discard marinade, cook turning once total of 6-8 minutes or until fish flakes easily.



Place a dollop of Wasabi butter over grilled fish and serve.
